Proving that healthy food doesn’t have to be bland and boring, this dessert is a real treat. As well as providing the health benefits of dark chocolate, this recipe substitutes sugar for Xylitol – a naturally occurring sugar found in fruits, vegetables and wood. As well as having a low Glycemic Load (meaning it doesn’t cause a spike in blood sugar levels), Xylitol actually appears to prevent tooth decay, making it a very favourable alternative to table sugar. Xylitol is now widely available in most supermarkets and health food shops.
Serves: Six people
- 350kg organic dark chocolate (at least 70% cocoa solids)
- 50g organic butter
- 100g Xylitol
- 4 large organic free-range eggs
- 1tsp vanilla extract
- 50g brown rice or quinoa Flour
- 1 inch chunk fresh root ginger – peeled and finely grated (optional)
Lightly butter 6 small pots and line with baking paper.
Blend the butter with the Xylitol to form a smooth consistency. Add the vanilla extract, eggs and flour and mix.
Break the chocolate into rough pieces and melt in a bain marie over a pan of simmering water. Allow to cool to room temperature.
Stir the chocolate into the mixture and add the grated ginger, pour into the buttered pots. Place pots onto a baking sheet and cook in the oven at gas mark 6 for 10-12 minutes (allow 2 extra minutes if taken straight from the fridge).
